Sure you can call it a casserole....but...

Okay, so I have gotten a heck of a lot done today....I ran 5 miles and did 30 minutes on the elliptical glider.....I went to Kroger's to grab Eric's fav pop (fresca, peach & cherry).....yesterday, I bought a generic brand which he hated....he couldn't even finish the can....:)...anyway, I also went to the DollarTree and picked up Asher a new Christmas coloring book, silly putty and play money.....just because...well, okay....I felt a little guilty....he kicked and screamed a little at preschool drop-off today....broke my heart.....little bu'gga....

Came home and decided to prepare a couple of meals for whenever....I told Eric that we were going to have eggs, sausage and biscuits, but now he has some options....

So, I need to explain something before you think that I love casseroles or something....
See, I love trying new recipes, but I really appreciate being able to prepare them during the day....put them in one baking dish.....into the fridge....and into the oven when needed....so most of the time, I try to revamp the recipe to do this....there are a couple of reasons for my madness......
1.  My favorite time of the day is when Eric gets home. Instead of preparing and cooking in the kitchen...I can follow him around the house like a little puppy dog asking him about his day....I don't even let him be while he's showering....I know...a little crazy...but, I miss him and have to hear every detail of his day....:)

2.  I never really know what time he is coming home and if he's going to be super hungry right when he walks through the door or want to wait for awhile.....

3.  Sometimes, he just wants take out or a frozen pizza...something different from what I've made....so I can just kick back and know that I have a dinner already done for tomorrow....

This is why a lot of what I make is casserolish....but, promise (cross my heart) it'll be tasty....

Here is what I made....

Mom's #3 Pasta
1 package of pasta
1 package of frozen peppers and onions
1 lb of Jimmy Dean sausage..I like hot...
1 jar of alfredo or anything similar (cream sauce)
1 1 small can of diced tomatoes with chili's
sprinkle of crushed red pepper...if you like...

Cook the sausage, add frozen peppers and onions....cook until heated thru...add sauce and diced tomatoes.....stir and put into baking dish...top with cheese.....when you are ready....bake at 350 for 35-40 minutes.....
I know...it is a little different.....yours is much better.....:)


put the lid on it, and into the fridge she goes until later tater!!

Delicious, Yummy, Scrumptious Concoction
1lb of hamburger
1 can of sloppy joe sauce
1 can of chili beans
1 can of corn
1 can of diced tomatoes with chili's
1 pkg of lipton rice...whichever...I used dirty rice...
1 onion
2 green peppers

Everything takes about the same time....
- cook the hamburger...drain grease and add sloppy joe sauce....
- saute chopped onion and green peppers until soft....
- prepare rice in microwave.....
Mix everything and put into a baking dish....top with cheese....bake at 350 for 35-40 minutes....I serve cheese or garlic bread.....biscuits or cornbread.....this isn't the healthiest, but it is really goooood!!! You can always eat carrots all day tomorrow....hee hee...(just jokin)

I like the fact that I can clean everything now and not have anything to do later....
so I can accomplish other tasks.......:(...boo....
